Grandma Lila's Egg Bake

16-20 slices of bread
2 cups American cheese
2 cups ham, cut into bite-sized pieces
6 eggs, beaten
3 cups milk
1/2 tsp mustard
1/2 tsp salt
2 c cornflakes, crushed
1/2 c butter, melted

Cover bottom of pan with 8-10 slices of bread with crusts cut off.  Add 2 cups American cheese and 2 cups ham.  Cover with bread slices like the bottom.

Beat together 6 eggs, 3 cups milk, 1/2 tsp. mustard and 1/2 tsp salt and pour over the layers.  Cover with foil and let stand overnight. (in refrigerator)

Take out and allow to come to room temp.  Mix 2 cups of cornflakes and 1/2 cup melted butter.  Sprinkle over top.

Bake at 350, uncovered for 1 hour.

Modifications:

I just buy the sliced American cheese and do two layers of it. I sometimes also do a shortcut and buy the already diced ham. I don't do 2 entire cups of it either. I buy the 8 oz pack.

yummy green beans

 
Ingredients:
1 lb. fresh green beans, ends removed
3 cloves garlic, minced
1 tbsp crushed red pepper
1 tsp kosher salt
1 tbsp dry rosemary, crushed
1/4 c olive oil
1 tbsp lemon juice

Preparation:
Preheat an oven on broil at 500 degrees F. Combine everything but the lemon juice in a large mixing bowl. Toss until beans are thoroughly coated. Spread in a single layer on a large baking pan. Broil on middle rack for about 15 minutes, stirring every 4-5 minutes. The beans are done when they are starting to char in places. Remove from oven and place back in the bowl, adding lemon juice and tossing to coat.

Quick and Easy Salsa


Ingredients
  • 3 red chilies (the small, dried chilies in the Mexican food aisle)
  • 2 Roma tomatoes
  • 1 small can tomato sauce
  • 1 tsp. minced garlic
  • 1/2 tsp. salt
  • 1 tsp. cumin
  • small handful of cilantro
  • 1 small onion
  • 2 T lime juice
* Taste test as you go along.  If you think it needs a little more of something, add it!  :) 

Preparation
  1. Roast the chilies for a few minutes in a frying pan.
  2. Chop the tomatoes and onions up into smaller pieces.
  3. Add the chilies, tomatoes, tomato sauce, garlic, salt, cumin, and cilantro to a blender or food processor.  Mix it up!
  4. Add onion and lime juice and mix it up a bit more.
  5. Serve.
